[Cooking Healthy Recipe] Getting Chippy with It! How to Make Parsnip Chips!
OMG I LOVE MY LAYS POTATO CHIPS!
Yet, I don’t eat them and man, I miss them!
I miss the crunch
I miss the salty
I even miss the grease they left behind.
AND…..
I am not a lover of the vegetables so I have to sneak them in.
And I am a sucker for a kitchen gadget!
I found this mandolin/shredder gizmo on www.amazon.com for $29!
It’s not only pretty but heavy duty! Check out the video above to see it in action!

I am sharing the recipe below HOWEVER, I am merely sharing a process!
Get creative and season your chips as you desire!
STEP 1: Peel parsnips (yes you can use another vegetable if you desire) and cut in half
STEP 2: Preheat Oven to 325 degrees. Line a cookie sheet with foil or parchment paper. If using foil, be sure to spray with oil to avoid sticking.
STEP 3: Get Jiggy with your slicer!
STEP 4: Place parsnippy chips in a bowl. Add 3 tablespoons of olive oil, 1 teaspoon salt, 1/2 teaspoon pepper and mix together until coated (I use my hands)
STEP 5: Lay chips SINGLE LAYER on the cookie sheet. Use 2 cookie sheets if needed.
STEP 6: Bake for 15 minutes. If not yet crisp then reset timer for 5 minutes. BE CAREFUL: these slim slices can burn fast so keep an eye on them!
